二〇一二年度私房菜馆食神大赛第二季--私房红烧肉[0P+9P验证]

主料:猪肘(一般人是用五花肉,因为在国外的关系,买不到比较满意的五花肉,所以用猪肘,不过猪肘还是有猪肘的风味)qfUi[9y;YCf
辅料:葱,姜,料酒(家里料酒用完了,用的威士忌代替的),糖,干辣椒数枚,八角,山奈,桂皮,香叶

1.把买回来的猪肘在大锅中煮40分钟左右,主要是煮的半熟,并去除血水,煮的时候可以加几片姜

2.把煮好的猪肘,凉一下(刚煮好,太烫了)。把肉从骨头上剔下来,并切成适当的小块

3.油锅中烧油,但是火一定要小,在冷油的时候就加入糖,同时用铲子不停的搅拌。直至糖完全融化在油里,并且呈褐色。同时有气泡在锅底冒出A~A~J4F'?

7.最后等锅内烧开,直至收汁完成。在起锅前加适量味精,盐。我个人还加了一些芝麻(为了稍微好看些)。最后起锅装盘即可。
