首先准备一只猪蹄膀(东北叫肘子),至于前腿还是后腿我可是一直没搞清楚,反正看到长的好看点的蹄膀就买。蹄膀一定要皮、肥肉、瘦肉俱全,去皮的蹄膀就不行了。

处理干净蹄膀后,放到高压锅里面白水煮,什么都不加,水刚好没过蹄膀。一般煮30至40分钟即可

蹄膀煮熟捞起,放凉后用保鲜膜包好放到冰箱中冷却,如果着急可以放到冷冻室冷到硬但不是成冰,这样经过冷却的肉切时能成型,热的肉切时容易碎且口感不好,所以一定要冷冻一下。Zhz*x~O

冷冻好的肉切成片,最好每片都是有皮、有肥有瘦。记住菜板要生熟食分开哟!
